I just have a quick question.

Can you control external speakers with an apple bluetooth keyboard's built in volume buttons?

Do this only work with a USB connection like screen brightness on external monitors?

Thanks!

Any Mac specific wireless/wired keyboard is supposed to do that. I currently use a Logitech wireless solar keyboard to adjust the volume of my external speakers.

Even if the speakers aren't connect via USB?

Yes, but just to be clear. Using the keyboard controls lets you adjust the output only. If your speakers' volume control knob is turn down all the way, you'll hear nothing.

If they're plugged into the headphone jack it works fine. Crank the speaker's built-in volume up to max and only use the Mac for volume control. That's how my sound bar on my Dell UltraSharp is set up.
