Mainly wanting to do this with a game called Diablo 3. It has no in-game iTunes controls. I also recently switched from an Apple keyboard to the Logitech K811, which has a play/pause button, but no track skip forward/back buttons.

I'm wanting to be able to skip forward/back through tracks. Wondering if their is a way to do it, other than switching back to an Apple keyboard.
 
You could either use Karabiner to remap some of the FKeys on your non-Apple keyboard, or write some AppleScripts that perform the actions you want, and assign those keyboard shortcuts through an App like FastScripts. I suppose you might use Automator scripts instead, but I've always found that more trouble than it's worth for simple little scripting problems.
