Converting AIFF to MP3?

IN itunes I see it allows me to convert selection to AAC- but how can I concert a AIFF to MP3?
 
Go to the Importing section of the preferences, and select 'MP3 Encoder' in the 'Import Using' menu. That will change the menu command to 'Convert Selection to MP3'. :)
