Converting MP4 or M4V files to make them smaller?

I've got some movies at the moment which are MacBook-quality - and around 2GB each.

I want the same quality - but on my iPod classic. So, I want to convert them to make them smaller.

What program can I use to do this?

iSquint reduced the quality too much.

I'm not sure what you mean by "Macbook quality" but a program you may want to try is "MPEG Streamclip" It's free and I use it on an almost daily bases.
