Converting Multiple ANALOG (VHS) to Digital at the same time

Is it possible to encode multiple VHS (Analog) to digital simultaneously and have the output dumped onto separate external drives?? I'm looking at purchasing a new MAC BOOK PRO for my wife so that she can encode all of her person VHS to Digital (DVD) and possibly do this as a side business. Any help would be greatly appreciated :).
