ClearDock--Remove color from dock and makes it transparent

Check out the May desktop thread. Some very nice ones IMO.
As for apps I would check out iChatStatus. It shows what songs your are listening to other iChat people. kinda cool. kinda boring after a while.
Also try setting up expose hot corners. Very cool.
