I am new to Apple and have always used windows in the past. I always found it easy to right click and copy and paste in windows, but find it very hard with my mac. I try to highlight words that I want to copy and find in hard to bring up the copy sign. What is the quickest way to C and P on the mac please can anyone advise.?

Right clicking works for me. I've just verified that in two different applications. So there apparently is a problem somewhere if you're not able to do that.
Log in under a different user account and see if it works then.
