I have some avi files that I want to watch on my iPad. I have tried the following:
1) Used MPEG Streamclip and converted a file from .avi to MP4
2) When I try and drag it into ITunes nothing happens

What I really want to do is get the files from my MacBook to my iPad

Use Handbrake and its iPad or Apple TV preset, as it will include the proper format and video and audio codec, which you may have not set properly in MPEG Streamclip.

Then there is also AirVideo, which allows you to stream .avi files to the iPad.
