Even in Apple applications, such as Numbers, when I use the mouse to select some text or partial numbers, I cannot see what has been selected as the 'background' of the selected range no longer changes enough in relation to the usually white background. This has always 'just worked' in the past.

How do configure Tahoe so that I can see what has been selected for cut or paste?
 
Unfortunately, that has already been done. Seems to me that the background when you select text should depend upon the current text and background, so that there is good contrast both with the background and with the selected text. This used to 'just work' and there seems to be no user control that I can find. At least for me, has really messed up this upgrade to Tahoe and 'Liquid Glass.'
