If I restore and setup as a new phone I will lose things like saved games.

After I JB is it possible to copy that info back to the phone without restoring from a backup?

Yes, there is a program that you can download from Cydia called "AppBackup." It will backup all the save data from all of your App store applications and then allow you to re-load this data without doing a restore from backup.
