copying, not merging, phone files to computer

I would like to copy my phone, Nokia E63, contents to my computer. iSynch won't do because it merges only and doesn't have an option to backup only, and there are files on my computer I don't want on my phone. I've Googled, searched Mac software, contacted Nokia ... no joy.

Is there a way to to copy only?
