I unpaired old AW and selected "Keep Plan", then I paired with new AW. AT&T login shows up and then I selected move from previous sync'd device. This sounds like the correct way.

"Keep Plan" implies to me that the AW cell plan stays attached to the old AW.

What if I wanted to keep old AW paired with iPhone, how would I remove the cell plan on old AW and move it to new AW?

“Keep plan” means “don’t close the account” in AT&T parlance. I think you would first need to unpair the old watch and pair the new watch to transfer the plan, and then re-pair the old watch without setting up a cellular plan.

When I activated my Series 6 the watch app asked if I wanted to move this new watch to my Series 5 plan....I said yes and that was it.....
Oh, you left your old AW paired and simply added your new AW?
