i’m trying to clean install Ventura. I’ve made an usb bootable disk and boo into recovery mode through the usb
However, I couldn’t find disk utility on the menu bar to erase the drive. Only edit and windows are available.
I’ve done clean install numerous time before but this is the first time i couldn’t find disk utility.
Did they change something with Ventura? How could I erase the old content in recovery mode?

Disk Utility is not in the menu bar in Recovery but is one of the four main items in the main Recovery window whether you boot from internal Recovery or a bootable USB. Screenshot is Monterey but Ventura is the same.

You don't say what Mac you have or what you mean by "Clean Install". If you mean you want get rid of cruft and remnants, since the Signed Sealed System Volume was introduced, these can only exist on the -Data Volume. On every boot the SSV is checked extremely rigorously that it is utterly unmodified. If it fails the machine won't boot and you have to re install. If it passes it is as clean as a fresh download.

If you want to get rid of the cruft, and you have a Silicon or T2 Intel Mac, you can return the machine to Factory state by "Erasing All Data and Settings" (Reference). That reference has links about other types of Mac.

If you were thinking of migrating from a Data Volume backup after the clean install, the cruft will migrate.

If you are currently on Monterey and want to upgrade to Ventura, Software Update will replace the Monterey SSV with Ventura SSV without using DU to erase anything.
