In its case.
My Watch series 5 counts steps accurately every day, however I'm unable to find a way for it to count steps specifically for walking workouts. If I want to count steps specific to a workout, I have to record the total step count for the day at the start of the walk, then again at the end of the walk and do (gasp!) math. Even cheapo Fitbit watches along with many apps available at the App Store will count steps during a workout, so why isn't that native to the AppleWatch? Or is it, and I just don't know how to access it?

Yeah, to best of my knowledge, no way to see steps easily for a workout.

There might be some apps out there that will read and display that information.

Can maybe whip up a Shortcut to help with this, but probably more hassle vs return: there is a Find Health Samples action that return the steps data.

Something that should get you close to what you want: go into Steps' day view in Health app, tap the bars for the hour(s) that cover your workout. Will give you most like a little too high a number, but will be in the ballpark.

Personally, I've only somewhat cared about day's total. More interested in distance, speed, elevation for my cardio workouts.
