People, recently Snow Leopard started to "reserve" CPU cycles capping CPU intensive applications rendering the App unusable. I don't know why this is happening and don't know how to debug this.

I've attached a screenshot of this problem while I'm playing WoW. You can see CPU cycles going down. The game reached a point of unplayability.

 
That could only be possible if the cpu overheats...
Check your temps.
Clean dust from inside and use smcFanControl to ramp up fan speed during gaming...

as you activate another app, in this case istat, other apps are de-prioritised to optimize performance. that screenshot you posted there is very common.

if you'd quit running in windowed mode and activate maximized mode or not windowed at all and just use expose or spaces to switch apps you would also see a performance boost.

I'm not a retard Lokrado... Watch the graphics history, I opened iStat just to see this. I've noted fps low as 5fps and THEN opened iStat to see what happened.
