Crashing/freezing problems with Catalina, latest MacMini, and external hard drives

Anyone else having issues with their external hard drives and Catalina?

I have two Seagate 5TB portable hard drives plugged into my MacMini, which I primarily use as a media server with both Plex and Roon. The Finder keeps "not responding" and my Mac will periodically restart spontaneously or need to restart.

Catalina broke Roon, but Roon has now been patched and it seems like this is a hard drive and/or Catalina issue.

Anyone else having issues or can suggest a solution?

I have crashing apps issue and lagging but with the whole OS itself. It seems it always beggins to mess up several days after a reboot and when it happens I have no choice to reboot it again to fix it all the crashes and lag.

Chrome also crashing a lot and when chrome is open, it does make other apps crashing.

I had zero issues when I had Mojave.
