Anyone know if its possible to create a bootable OSX system backup on blu-ray disc? Let's say a 50GB BDR-DL disc. I'm looking to burn some BDR-DL discs with my new burner and want to practice on something productive. I realize I would have to set startup preferences to disc drive for any chance of this working.

I guess I would start in disc utility (I'm on 10.11.2) and create a .dmg file (.img?)? If I have a few programs installed how do I get the size down to below 50GB? If this works, I realize it would be slower speeds, but would software even open?

I think you would run into issues as your startup disk (in this case the Blu-Ray disc) is not writable and normal Mac OS X isn't designed for a read-only start-up disk. Then again, I've never tried it. Installs on USB drives work properly albeit slowly.
