I have been writing and selling reports online using openofficeorg. for years.

Now that I'm on a Mac I was wondering if there was a specific software program that made writing and compiling an E-book simple and fast (chapter highlights, image imports, border designs, etc).

Adobe InDesign is great to produce professional looking documents. But there is a learning curve. I am writing reports too and I start on Word/Powerpoint and finish on InDesign.

That's a great option, thanks.

A little pricy though, but isn't everything that provides quality? (like Macs :))

A lill' bit pricey I agree but it's totally worth it if you want to get a nice layout.

If you want to go for cheaper, you can have a look at Pages.
