I have a friend (yes really), that had her iPhone 4S by her ex-boyfriend, so her iTunes and everything is under his name and e-mail address. Is there a way that I can back up her phone to iTunes and create a new iTunes account and restore everything to her new iPhone 6?

Should be ok but you won't get any of the purchased apps/music associated with the ex's account without his Apple ID and password.

You don't need an app to wipe music on OS X, just drag it to the trash.

Wasn't suggesting it to wipe it, was suggesting it so he could keep the music.
