Firmware is on the product itself, it has nothing to do with Snow Leopard. That said, why would you need to? Is the firmware on the SSD out of date or something?

Crucial claims the new update will improve stability. Do new SSDs come with the latest firmware already?

Yes. New SSDs come with the latest firmware. If you want to be certain it's up to date, you can try installing it anyway. It should let you. It likely isn't needed however.
