How can I have an image on my site when clicked have an animated resize as shown on Apples site here

Click the view larger image of the MacBook Pro.
 
Those are generally done with a combination of CSS and JavaScript. Use Google and you'll find dozens of them free for use. I've even made one.
 
How can I search for it if I don't know what it's called?

You've got some good words in your original post e.g., animated, image, resize, CSS, clicked on. And, I supplied one more, JavaScript. That's all it takes to get started finding them. The lightbox mentioned above is one you'll likely come across along with the dozens of lightbox clones that have been developed after being inspired by it.

Based on what was linked by the OP, my implementation would be more primitive than what he wants. Mine does what I wanted at the time, though I have built upon what I originally had. Though, mine is one of the easier ones to use as it doesn't require editing any of the HTML (besides a script tag). The script is on my site, which can be accessed through my profile here for those really wanting to see it.
