Custom Firmware General Question

Whats the point of using a custom firmware, how does it very from pwning a stock firmware?

Does it just allow you to restore back to that firmware without using Redsn0w or Blackra1n to pwn it?

It allows jailbreaking and upgrading to any OS that is supported without affecting the baseband.
