I've altered some of the stationary templates in Mail and hit save and I've also created a custom template and hit Save as Stationary. They're there, until I go to create a second new message and then they are gone.

What the heck am I doing wrong?

Thanks!

New message > type a couple of letters and select them.

You can change the background colour via > Fonts then clicking the page icon, then the colour you want to use. Set the font, size and colour and shadow if you want it, all using the same fonts window.

If you can't see the options in the font window drop down the gear icon on the bottom of the window to show effects, colours etc.

This you can save as stationary and will be available for new replies in Custom. If you add a picture it will not work.
Keep playing as this is just as far as I have got with it.
