Cydia apps question + update Q

Okay so I did my first jailbreak on 4.3.1 and freaked out a little when it came time for an update. So last night i undid the jailbreak and its working perfectly but OOOO so bland and boring. I did't expect to get so attached to the jb features so fast, but i did. So I have 2 questions. First I hit the restore from the main screen when iphone is plugged into my macbook and did restore and update then restored from backup. Is it too late to just go ahead and jailbreak again with the updated redsn0w software i have? and my second question is I bought apps in cydia .. never got around to an app backup one. How do i get them back without paying again?

You simply reinstall them.

keep in mind cydia's server is having some issues at the moment. most likely you will have to wait for Amazon to fix it!
