While updating a couple of apps a couple of weeks ago, either the battery died or I'd gone out half way through (can't remember now) but ever since they've been unusable - they just keep saying "installing"; now I can't do a single thing to them except move them. I've tried uninstalling them via iTunes but the bloody things won't budge.

Any suggestions?

Restore the device? Over suggested I know but is probably your only other option.
 
did you try rebooting the phone?

I got a similar problem when I downloaded a new app and moved it into a folder while downloadning. I got two icons, one in the folder (that worked) and one "grayed out" that didn't and that I couldn't remove. After a reboot (home/power untill apple logo appears) the "ghost icon" wasn't there anymore.
 
Had this issue on my ipad, was because ther was itunes match downloads that hadn't finished (they were stuck).

Went into the "itunes" app and deleted the queued downloads and then my apps began downloading again.
