My old man's Powerbook kicked the bucket yesterday and he's in the slow process of taking it apart and seeing which parts are salvageable. Is it possible to use the display as a monitor with some kind of adapter?

Possible, but not without some electronics work 
You'll need such a thing (DVI->LVDS converter - this one has VGA too - just for reference): http://www.avalue.com.tw/products/EPM-1525.cfm + PSU to deliver power to inverter and this board. You'll need pinouts of your LCD too.
