I have a new IMac with Windows XP loaded on a seperate partition. Somehow when ever the computer is rebooted without holding the "option" key down it boots to Windows regardless of what operating system was up last. Is there a way to change this default boot? I would prefer the default to be OS X.

Yes. Use the "Startup Disk" control panel in Windows (installed when you installed the Boot Camp drivers) to change the boot disk to your OS X partition.
