default mail service in OSX Mail

How do I set up the default outgoing mail service in OSX Mail?? I have 3 coming in.

generally use the smtp from your ISP.

I seem to recall a button to click that would make one of the e-mail accounts the default outgoing one. I can't seem to find that in Leopard.
