Is there a way to bulk delete all emails from the junk mail or trash without having to individually select them all? Maybe I’m just dumb and can find the option or long pressing the wrong place.

Yes, there is. 
1. Tap Edit
2. Tap "select all" at the top left
3. If you don't see "select all" on the top far left, you can also use your finger and swipe down over the select boxes and it will select all as you go.
