delete all partitions for Big Sur

I installed Big Sur into MBP latest 2013 but I got n.2 Machintosh HD data, so I want to erase all partitions and to start again with new fresh installation by bootable usb device, where there is Bug Sur installation.app.
I'd like installation creates automatically all partition schema (VM, recovery, Macintosh hd, Macintosh hd data,...)
What partitions can I delete in Disk Utility to get my target? What steps?
