I am a musician and create lots of song folders in the Sidebar by creating and dragging from the Desktop.
The issue I have is in the past I've deleted the original Desktop icon to keep it clean, but I can almost swear when I did that the Sidebar folder disappeared along with the containing files. icons in a log time for fear I'll lose them. Yes, all backed up, but it's a hassle for this to happen.

I have not deleted any Desktop icons in a long time for fear of losing. Yes, all backed up, but it's a hassle for this to happen.

Is this possible or is there a fix ?

By sidebar do you mean the dock with your app icons or the sidebar in Finder.

Whatever the case you’re not actually moving the folder you’re creating a link back to it on the desktop. Which is why when you delete the folder on the desktop the link in the sidebar disappears.

If you don’t want icons on your desktop, I’d recommend saving them in your documents folder and then creating the links to the sidebar.
 
When you drag a folder to the Sidebar, it creates a shortcut to the desktop original as are all the other items in the Sidebar. You can verify this file path of the Sidebar folder alias by enabling (with a Finder window open) View > Show Path Bar.

If you don’t want the folders on your desktop, you’re going to have to move them to another location, such as your documents folder and then recreate the links to the sidebar.

No need to recreate any links, they still reference the same folder no matter where you move it. Just don't move to the trash.
