How can I delete previous back ups on my apple watch?

when you restore the AW, it asks as new or from back up and i have a few i dont need in that list so is there a way to delete those?

Settings-General-iPhone Storage-Watch
 
Assuming you're on iOS 11,

Settings > General > iPhone Storage. This will list all of your apps based on the amount of space they take up on your phone. Find the listing for "Watch" and tap it. It will list individual backups and you can swipe right to delete them.
