Deleted all iCloud backups and then created one from my phone

However, it 'merged' with *something* and I now have a load of crud on my phone. What exactly did it merge with if I had no previous backups?

I just want to create a fresh backup of what's on my phone (once I've deleted the stuff I don't want AGAIN). Is this possible?
