I went to delete a file within my document folder and it deleted the whole thing. Now the "Document" folder is missing, how do I get it back :( I'm not refer to the content, just the actual folder.

This is not the first time its happened :(
 
Have you tried making a new folder named "Documents"? Worked for me when I didn't have the "Sites" folder after an upgrade.
 
If it is the alias in the Finder Window/Places or the Dock, just drag and drop the Document folder to create an alias.
 
I did this just the other day and OS X just created a new one automatically after I emptied the trash. How I wish I had checked the trash before emptying! At least I had a backup.
