If the phone was backed up with the texts on it, you could restore. That's a pretty extreme measure though to get an old text message back.
Edit: Actually you wouldn't necessarily have to restore, there are utilities to extract data from iTunes backups. Those only work with backups to a computer though, if it's backed up to iCloud the only way to recover info is a complete restore.
