I'm waiting for iPhone 6 so I've been hanging on to my iPhone 4. It's been difficult to hold out but all is good except think my phone has become slow due to bigger/newer apps that require more RAM/CPU etc. Newer apps are more compatible with newer phones etc.

I'm wondering if deleting as many apps as I can will improve performance of my phone. Possible?

It's possible, especially if you are really low on empty space. Restoring the phone as new and then only putting on what you need on it (and not just using a backup basically) might do even more good if things are really cluttered and somehow slow/unstable.
