Deleting attachments, but not the e-mail, etc...

Question #1:

Does anyone know how to delete ONLY the attachment to an e-mail without deleting the e-mail that contains it as well?


Question #2:

For some reason, some of the headers in the list of e-mails do not correspond to the actual body of the e-mail when I open it. What is going on and is there a way to fix it so that the e-mail headers correspond to the actual e-mail body of text when I open it?
