I haven't watched a video since the 1.1.2 update, but in the previous versions after you watched a video a message would pop up asking if you would like to delete the video to save space. Clicking yes would get rid of the video and not require a sync to iTunes.

wipe your finger from the left to right of the video you want to delete and a delete button will appear.
