Hello,
Ive pasted a picture just so i can explain more in detail what i mean.

Photos has imported all of iPhone events (as so with everyone of course)

But when i expand the drop-down arrow for the sub folder 'iPhoto events', I'm listed with about 200 events from iPhoto.

If i delete these events, will the photos from ...
Sub Category - 'Photos'
and
Sub Category - 'All photos'
..be deleted also?

Im basically wanting to get rid of all these iPhoto events, and create individual albums.

When importing from the iPhone, iPhoto will create events by the date of the pictures. That's why you have 200 events. I am not sure but I think if you delete an event it will delete all the photos in that event so, you can't create an album. Again, I'm not sure. I'm using now the new Photos App.
