Could I use this Apple DVI to S-Video adapter to connect my PS2 to the above Dell monitor? The adapter is written as for DVI video out on laptops to a monitor, but would it be possible for me to use it as S-video out on a PS2?

No... the PS2 has to have a DVI port for that to work. You've got it backwards...

I think you need to step up to the 2007WFP, if I'm not mistaken, if you want a PS2 to work on it.
 
The 2007WFP is quite adequate for gaming. I'm no expert on the subject, but I've heard more than a few people say that timings on IPS-style panels (of which the 2007 is one) are not quite directly comparable to standard PVA panels for some reason or another. I do some light gaming and lots of video viewing, and the 2007WFP is fantastic. I have two friends that are heavy gamers, lots of FPS with fast movement, and they both have 2007WFPs and love them. Get it; it's the least expensive monitor of that size with all those inputs and it looks fantastic.
