For the most part, I prefer using Mail over other clients, but one feature I miss in Mail on Sequoia is the snoozing. Is it finally available now in Apple Mail?

Isn‘t that what Remind Me does?
Use Remind Me to come back to emails later in Mail on Mac
In Mail on your Mac, receive reminders to respond to or take action on emails at a later time.

The issue with Remind Me is that it only functions when you keep the emails in the inbox, not when they're archived. I prefer to delete them until it's time to be reminded about them. Spark and Airmail, on the other hand, work with archived emails and display them again in the inbox at the scheduled time.
