I can't remember where, but I thought I read recently that Apple hasn't given developers full access to the sensors, but plan to do so some time in the near future? Is that true?

I don't have an apple watch yet (planning on getting one) but from researching, it seems like the app store doesn't have the quality of impressive apps as I expected. I'd hope there's still a lot still to come from the app development side in terms of the true potential of the watch? (Mainly referring to the health/fitness potential)

Well, it depends on what you are after. You have access to almost all the sensors now, but that is usually limited to a workout session or the brief time the app is running on the Watch face. If that is enough for your use case, then you are good to go.
