I updated yesterday to the latest iTunes 12.5.1.21. The day before that I was able to backup my iPhone just fine. Now with the update, no device I connect to laptop shows up (iPhone 6, ipad air, ipad mini). I tried using different USB ports, cables, and even a fresh install of itunes all with the same results. Any help or suggestions would be greatly appreciated. Thanks.

I just had this same issue as well on the same iTunes version (12.5.1.21).
1. Right click on Start and select "Device Manager".
2. With phone plugged in find it under "Portable Device" (after fix the device now appears under Universal Serial Bus controllers).
3. Right click on the Apple device and select "update driver software".
4. Select the second option, "Browse my computer for driver software".
5. Enter this location in the search field without the quotes "C:\Program Files\Common Files\Apple\Mobile Device Support" and hit next.
6. And the phone should be recognized by iTunes.
