I have 1 doubt.. I could try this myself, but I'm scared it will make my phone to be unusable...

My question is that, if suppose I have a passcode on my phone. And as a fact, I know that you cannot restore from iTunes by clicking the restore button directly, nor can you erase all contents from your phone without typing/removing your passcode... But what if u restore via dfu/recovery mode? I mean, iTunes recognizes the device and says its in recovery mode, you don't need to turn off find my iPhone.. I don't know if the passcode thing also applies to this ... Can anyone help me out? If my phone is lost, can they restore and use it via dfu?
 
Yes they can.

But if the phone is iOS 7 or above, once restored they will run into iCloud activation lock. Unless they have your Apple ID and password they will be unable to proceed further.
