So I tried to test dictation with a text. I hit the microphone, said "this is a test" hit done... I saw blue dots moving, but never saw the text show up... I tried several times, saying different things but no luck.

Yup. Same problem here. I think the apple servers are so overwhelmed they can't keep up. I noticed that when you try dictation, it jumps out to the network for processing.

So what do servers have to do with dictation? It's not hardware/software???

It has worked before for me, quite well actually. However, it seems there are kinks in the server. Sometimes it will even stop listening a half a second after I press it, which seems to be perhaps a separate bug.

We must be patient given the unprecedented nature of a launch such as the 4S (three carriers at once in the US where before it was only one!!).

The dictation is basically an extension of the technology used for Siri. Your iPhone goes out to one or more Apple datacenters to handle all voice interactions.

It seems the servers are getting hammered to me, and on a regular basis. Apple will surely recognize the overburdening of the servers and make an adjustment in time; they appear to have underestimated the impact of a million people trying to get funny answers to obnoxious questions out of Siri bogging things down.

Right after I posted this it start working for me.

Mac dictation works on one Mac, not the other one

Dictation works fine on my Macbook Air, but not on my older Macbook. Both have Mountain Lion. The little mic seems to be taking the dictation, but nothing prints. Tried it in several different places, still nothing. The mic is on auto, fn key (twice), english. Any ideas?
