Here's what I did

1) I made a backup of my iPhone in iTunes
2) I then hit the Restore button (with my SIM inside).
3) After a few minutes, iTunes tells me that my phone has been restored to factory seettings. It then asked me to either "Set up as a new iPhone" or "Restore from backup of: . . ." I selected neither, and disconnected my iPhone.

4) I took out my SIM card

5) I'm ready to ship out my iPhone

Did I miss a crucial step?

You missed a crucial step to securely remove data, yes.

There is a reset option under general settings which zeros (blanks) the hard drive, which can take a couple of hours.

However, it's very unlikely that the receipient will attempt to recover your data as it's not entirely a straightforward process.
