Notice now in settings>camera that's there's an option to set video at 1080P@60fps, was this option always there? Or did the iPhone 6 only record in this when it thought it needed to?

I've set it at 1080P@60fps as to me you should always record in the best/highest then if need to you can downscale afterwards?

Yes. Been doing it for some time now (only after I stumbled upon the setting by accident lol)
