On versions before WatchOS 9, when I was playing something on my iPhone, there would be a small icon at the top center of my watch face showing that something was Now Playing. It was not a complication and a complication was not needed. With that icon showing, I could tap on it and it would open the Now Playing app/section on my watch, giving me the the volume, pause/play and navigation controls. I do not see that now playing icon any longer.

Did Apple get rid of that icon/shortcut?
 
Yes. Not available anymore on watchOS 9. You can see all available icon in support site:

the now playing icon legend indicate this:
In watchOS 9 and later, this icon doesn't appear, but the app that's playing audio appears at the top of the Dock.
