To my understanding, health data, trophies, activities, etc. are all uploaded to the cloud.
If that's the case, what would happen if I set up as new versus restoring from back up?
Does restoring from back up only preserve and restore the settings (IE. notifications) and apps only or does it actually have something to do with your actual analytics/data?
 
Effectively it’s really little more than settings. Like you said, your health data is saved to the cloud, so you won’t lose that.

You really have little to lose by trying it. Set up the watch as new and if you discover that there is something missing or you don’t want to go through and reconfigure your settings, then just unpair it and then re-pair it and this time restore from backup. (Just make sure to chose the backup of your old watch and not the backup that would have been made of the new watch when it got unpaired)
