Are there any advantages to the new iPhones vs the 5s as far as software goes?
 
There are no release notes yet as far as I know. I think they are the same. I don't think you have to worry about feature differences until at least iOS 9.

I don't know about that. Siri was a 4s-only feature of iOS 5. And I have a funny feeling the 240fps video mode on the 6 won't be available to the 5s - but I'd love to be proven wrong there.

Hardware specific features like Apple Pay, which requires the new NFC hardware built into the 6, obviously won't work on older phones - just like Touch ID on the 5s was specific to that device. But when it comes to all the software features of iOS 8 I would love to know what the rest of us do and do not get to enjoy :)

On the 6 and 6+ you see contact photos in the Messages app, I believe. Do not have that for the 5.

It doesn't list the time lapse option mentioned in the keynote, so I'm hoping that's tied into burst mode, which is listed as being the same across the 6/+ and 5s.

There are likely a few little things within iOS 8 that are device-dependent (like some of the things the 6+ can do with it's larger screen) and aren't listed here. I'd love to know what they are, but I'm sure the blogs will have complete rundowns mere minutes after they have the new phones in their hands :D

Time lapse option is present on my iPhone 5.
 
VoLTE is also exclusive to the 6/6+ even though I'm fairly confident the 5/5S have the hardware for it. I was looking forward to VoLTE calls on my 5S too. Oh well....
 
dont forget there is now a barometer also on the iphone 6.
That lends way to local weather alarm like apps that will alert you of a storm coming once it notices an extended downward trend of the barometer.
